Gardein Holiday Roast Recipe

Ingredients:

  • 1 Gardein Brand Roast (16 oz)

  • 2 tablespoons olive oil

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 2 cups vegetable broth

  • 1 cup carrots, sliced

  • 1 cup celery, sliced

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • Salt and pepper to taste

  • Fresh parsley, for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until the onion is translucent.

  3. Add sliced carrots and celery to the skillet, cooking until they soften, about 5-7 minutes. Season with thyme, rosemary, salt, and pepper.

  4. Carefully move the roasted vegetables to a baking dish and pour in the vegetable broth.

  5. Place the Gardein roast on top of the vegetables in the baking dish.

  6. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

  7. Remove the foil and bake for an additional 15 minutes, allowing the roast to brown slightly.

  8. Once done, remove from the oven and let it rest for 5 minutes. Carefully slice the roast.

  9. Serve warm, garnished with fresh parsley, alongside the roasted vegetables and broth from the dish.
