Ingredients
1 block (14 oz) firm tofu, drained and pressed
2 tablespoons soy sauce
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
Salt and pepper, to taste
4 large whole grain tortillas or wraps
1 cup shredded lettuce or spinach
1/2 cup sliced cucumber
1/2 cup shredded carrot
1/2 avocado, sliced
1/4 cup vegan dressing of your choice
Fresh herbs (e.g., cilantro or parsley), optional
Instructions
Marinate the Tofu: In a bowl, mix together soy sauce, olive oil, garlic powder, smoked paprika, salt, and pepper. Cut the pressed tofu into strips or cubes, then toss it in the marinade. Let it sit for at least 15 minutes to absorb the flavors.
Cook the Tofu: Heat a non-stick skillet over medium heat. Add the marinated tofu and cook for about 5-7 minutes on each side, or until golden brown and crispy. Remove from heat and set aside.
Prepare the Wrap: Lay a tortilla flat on a clean surface. Spread a layer of vegan dressing over the tortilla.
Add Fillings: Top with shredded lettuce, cucumber slices, shredded carrot, avocado, and cooked tofu. Add fresh herbs if desired.
Wrap It Up: Starting from one end, carefully roll the tortilla tightly around the fillings, tucking in the sides as you go. Slice the wrap in half for easier handling.
Serve: Enjoy immediately, or wrap it in foil for an on-the-go meal.
