Ingredients:
1 cup brown or green lentils, rinsed and drained
1 tablespoon olive oil
1 onion, chopped
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
6 cups vegetable broth
1 can (14.5 ounces) diced tomatoes, undrained
2 cups kale or spinach, chopped
Salt and pepper to taste
Lemon wedges (optional, for serving)
Instructions:
In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté for about 5-7 minutes until the vegetables are softened.
Stir in the garlic, cumin, smoked paprika, and thyme, and cook for an additional minute until fragrant.
Add the lentils, vegetable broth, and diced tomatoes (with their juices) to the pot. Bring to a boil, then reduce the heat to low and cover. Simmer for 30-35 minutes, or until the lentils are tender.
Stir in the chopped kale or spinach and cook for another 5 minutes, until wilted. Season with salt and pepper to taste.
Serve hot, with lemon wedges on the side for squeezing over the soup, if desired.
