Apple Brown Betty

Recipe: Apple Brown Betty

Ingredients:

  • 6 cups sliced apples (such as Granny Smith or Honeycrisp)

  • 1/2 cup granulated sugar

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1 tablespoon lemon juice

  • 1 cup fresh bread crumbs

  • 1/2 cup packed light brown sugar

  • 1/4 cup vegan unsalted butter, melted

  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C).

  2. In a large mixing bowl, combine the sliced apples, granulated sugar, cinnamon, nutmeg, and lemon juice. Toss until the apples are well coated.

  3. In another bowl, combine the bread crumbs, brown sugar, melted butter, and vanilla extract. Mix until the bread crumbs are fully coated.

  4. In a greased 9x13-inch baking dish, layer half of the apple mixture on the bottom. Then sprinkle half of the bread crumb mixture over the apples.

  5. Add the remaining apples on top of the first layer and finish with the remaining bread crumb mixture.

  6. Bake in the preheated oven for 30-35 minutes, or until the apples are tender and the topping is golden brown.

  7. Allow to cool slightly before serving. Enjoy warm, with vegan ice cream or whipped cream, if desired.
