Ingredients
For the broth:
4 cups dashi (or vegetable broth)

14 oz fresh or frozen udon noodles
For the kitsune (tofu):
8 oz firm tofu (atsuage), sliced
2 tablespoons soy sauce
1 tablespoon mirin
1 tablespoon sugar
1 tablespoon vegetable oil
Garnish:
Chopped green onions
Shredded nori (seaweed)
Instructions
Prepare the broth: In a pot, combine the dashi, soy sauce, mirin, and sugar (if using). Bring to a gentle simmer over medium heat.
Cook the udon: Meanwhile, in a separate pot, bring water to a boil. Add the udon noodles and cook according to package instructions until tender. Drain and set aside.
Prepare the kitsune: In a skillet, heat the vegetable oil over medium heat. Add the tofu slices and fry until golden brown on both sides, about 3-5 minutes. In a small bowl, mix the soy sauce, mirin, and sugar. Pour the mixture over the fried tofu and cook for an additional 2 minutes, allowing the flavor to soak in. Remove from heat.
Assemble the dish: In individual bowls, place a serving of udon noodles. Ladle the hot broth over the noodles, then top with the sweetened fried tofu. Add any additional garnishes such as chopped green onions and shredded nori.
